
Jamaican Ackee Scramble with Fried Dumplings
A kid-friendly take on Jamaica's national dish. Soft scrambled eggs mixed with mild ackee, sweet peppers, and tomato, served alongside golden pan-fried dumplings for dipping.

- 1/2 can (about 100g) ackee, drained gently
- 2 large eggs
- 1 tablespoon butter
- 2 tablespoons diced red bell pepper
- 2 tablespoons diced tomato, seeds removed
- 1 small scallion, green part thinly sliced
- Tiny pinch of black pepper
- 1/2 cup all-purpose flour
- 1 tablespoon cold butter, cubed
- 3-4 tablespoons water
- Vegetable oil for frying

Make the dumplings first. Mix flour and cold butter cubes in a bowl, rubbing with your fingertips until it resembles breadcrumbs.

Add water a tablespoon at a time and mix until a smooth dough forms. Divide into 6 small balls and flatten each into a disc about 1cm thick.

Heat a thin layer of oil in a pan over medium heat. Fry dumplings for 3-4 minutes per side until golden brown and cooked through. Set aside on a paper towel.

In a separate non-stick pan, melt butter over medium-low heat.

Add diced bell pepper and cook for 2 minutes until slightly softened.

Add diced tomato and cook for 1 more minute.

Whisk eggs in a small bowl and pour into the pan. Stir gently with a spatula.

When eggs are halfway set, carefully fold in the drained ackee pieces. Stir very gently to avoid breaking the ackee apart.

Cook until eggs are just set but still soft and creamy. Remove from heat.
