Rainbow Sweet Potato Egg Nests

Soft sweet potato "nests" with cheesy egg and colorful veggie pearls for a fun, balanced finger-food lunch.

Ingredients(6)

  • 1/2 small sweet potato, peeled and finely diced
  • 1 large egg
  • 2 tbsp finely chopped spinach (fresh or frozen, squeezed dry)
  • 1/4 cup finely diced red bell pepper
  • 1 tbsp shredded mild cheddar cheese
  • 1 tsp olive oil

    Dice sweet potato and bell pepper very small (3 min)

    Heat olive oil in small nonstick pan on medium (1 min)

    Sauté sweet potato and bell pepper until very soft, add splash of water and cover if needed (8 min)

    Stir in spinach and cook until wilted and soft (2 min)

    Shape veggies into two small "nests" in pan, leaving a dip in each center (1 min)

    Beat egg with cheese in a small bowl (1 min)

    Pour egg-cheese mix gently over and around nests, stirring lightly (3 min)

    Cook on low, stirring and breaking into baby-sized soft chunks (3 min)

    Cool slightly, then cut into pea-sized soft pieces or strips for self-feeding (3 min)
