Cheesy Broccoli Rice Balls

Crispy on the outside, cheesy and soft inside - these baked rice balls are a fun way to get vegetables into your toddler. Perfect for little hands to grab.

Ingredients(7)

  • 1 cup cooked rice, cooled
  • 1/2 cup finely chopped steamed broccoli
  • 1/3 cup shredded cheddar cheese
  • 1 egg, beaten
  • 2 tablespoons breadcrumbs
  • 1 tablespoon grated parmesan
  • Pinch of garlic powder

    Preheat oven to 200°C/400°F. Line a baking sheet with parchment.

    Steam broccoli until very soft, then chop finely.

    In a bowl, mix cooled rice, broccoli, cheddar, egg, breadcrumbs, parmesan, and garlic powder.

    Mix until everything holds together well.

    Roll mixture into small balls (about 1 inch diameter).

    Place on baking sheet, leaving space between each.

    Bake for 20-25 minutes, turning halfway, until golden and crispy.
