Mac and Cheese with Hidden Cauliflower

  • 120g elbow macaroni
  • 1 cup cauliflower florets
  • 1 tablespoon butter
  • 1 tablespoon plain flour
  • 3/4 cup whole milk
  • 3/4 cup mild cheddar cheese, grated
  • 1 tablespoon cream cheese
  • Pinch of nutmeg (optional)

    Bring a large pot of water to boil.

    Add cauliflower florets and cook for 8-10 minutes until very soft.

    Remove cauliflower with a slotted spoon (keep the water boiling).

    Add macaroni to the same boiling water and cook according to package directions until soft.

    While pasta cooks, blend the cooked cauliflower with 1/4 cup of the milk until completely smooth.

    In a separate saucepan, melt butter over medium heat.

    Add flour and stir for 1 minute to make a roux.

    Gradually add remaining 1/2 cup milk, whisking constantly to prevent lumps.

    Cook for 2-3 minutes until sauce thickens.

    Remove from heat. Stir in grated cheddar and cream cheese until melted and smooth.

    Stir in the cauliflower puree and nutmeg if using.

    Drain pasta and add to the cheese sauce. Stir until evenly coated.

    Cool to eating temperature before serving.
