Sunny Chicken Rainbow Couscous Bowl

Ingredients(6)

  • 1/4 cup small couscous (dry)
  • 1/4 cup cooked chicken breast, finely diced
  • 1/4 cup carrot, finely diced
  • 1/4 cup frozen peas
  • 1/4 small orange, peeled and cut into tiny pieces
  • 1 teaspoon olive oil or unsalted butter

Instructions(6 steps)

    Boil 1/2 cup water in a small pot.

    Dice carrot and chicken into pea-sized bits.

    Add couscous, carrot, peas to boiling water, cover and turn off heat.

    Rest couscous covered until liquid is absorbed and carrot is tender (about 5 minutes).

    Fluff couscous with fork, stir in chicken and olive oil/butter, warm on low.

    Cool slightly, add tiny orange pieces on top and serve.
