  • 1/2 small sweet potato, peeled and 1/4-inch diced
  • 1/4 small apple, peeled and finely diced
  • 1 large egg, beaten
  • 2 tbsp mild shredded cheese (cheddar or mozzarella)
  • 1 tsp unsalted butter or oil
  • 1 small rice cake or 1/2 slice whole-grain toast, broken into tiny pieces

    Steam or microwave sweet potato with a spoon of water until very soft (5 min)
