Chicken and Sweet Potato Soft Bites

  • 1 small boneless skinless chicken breast (about 150g)
  • 1 medium sweet potato (about 200g), peeled and cubed
  • 2 tablespoons plain whole-milk yogurt
  • 2 tablespoons rolled oats, finely ground
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon olive oil

    Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Place sweet potato cubes in a small saucepan, cover with water, and boil for 12-15 minutes until very soft. Drain well.

    Meanwhile, poach the chicken breast in a separate small saucepan of gently simmering water for 14-16 minutes until cooked through (no pink inside). Let cool slightly.

    Finely shred or mince the chicken into very small pieces using two forks.

    Mash the sweet potato until smooth, then mix in the shredded chicken, yogurt, ground oats, and garlic powder.

    Shape mixture into 12 small oval bites, about 1 tablespoon each, and place on the prepared baking sheet.

    Brush tops lightly with olive oil. Bake for 12-14 minutes until lightly golden and firm to the touch.
