Creamy Salmon Sweet Potato Mash Boats

  • 1 small sweet potato, peeled and diced small
  • 2 oz boneless skinless salmon, cut into tiny pieces
  • 1/4 cup frozen peas, thawed
  • 2 tbsp plain whole-milk yogurt
  • 1 tsp olive oil
  • Pinch mild paprika (optional)

    Boil sweet potato in a small pot of water until very soft (10 min)

    Add peas to the same pot for the last few minutes of boiling (3 min)

    Drain and return sweet potato and peas to pot, add olive oil and mash (3 min)

    Pan-cook salmon pieces in a small nonstick pan until opaque and flaky (5 min)

    Flake salmon finely with a fork and stir gently into warm mash with yogurt (3 min)

    Spoon into a shallow bowl and cool to a safe temperature (3 min)
