Creamy Lentil Coconut Millet Mash with Sweet Carrot Fingers

  • 2 tbsp red lentils, rinsed well
  • 2 tbsp millet, rinsed well
  • 1 small carrot, peeled and finely grated (plus a few thin batons)
  • 1/4 cup canned coconut milk (full fat, unsweetened)
  • 1/4 tsp mild curry powder (salt-free)
  • 3/4–1 cup water

    Rinse lentils and millet under running water (2 min)

    Peel carrot, finely grate most, cut a few soft thin batons (3 min)

    Add lentils, millet, grated carrot, curry powder, and 3/4 cup water to small pot (1 min)

    Bring to a gentle boil over medium heat, then reduce to low, cover, and simmer (12 min)

    Check softness; add a splash more water if needed and cook until everything mashes easily (3 min)

    Stir in coconut milk and cook uncovered on low until thick and creamy (3 min)
