Creamy Lentil Apple Cottage Pie Mash

A cozy, mildly sweet lentil and veggie mash topped with soft potato that is easy to gum and very filling.

Ingredients(6)

  • 1/4 cup red lentils, rinsed well
  • 1/2 small potato, peeled and diced small
  • 1/4 small carrot, peeled and finely chopped
  • 1/4 small apple, peeled and grated
  • 2 tbsp plain full-fat yogurt or cottage cheese, finely mashed
  • 1 tsp unsalted butter or olive oil

    Rinse lentils under cold water.

    Peel and dice potato and carrot. Grate apple.

    Add lentils, potato, carrot to small pot, cover with water by 1 inch.

    Simmer until very soft, stirring once or twice (about 12 minutes).

    Drain most liquid, leaving a few spoonfuls for mashing.

    Mash mixture to soft mash with small lumps. Adjust water as needed.

    Stir in grated apple, yogurt or mashed cottage cheese, and butter/oil.

    Cool to lukewarm. Shape some into small soft lumps for finger food.
