Soft Scrambled Eggs with Toast Soldiers

  • 2 eggs
  • 1 tablespoon whole milk
  • 1 teaspoon unsalted butter
  • 1 slice wholemeal bread
  • Small knob of butter for toast

    Crack eggs into a bowl, add milk, and whisk until well combined.

    Place a non-stick pan over low heat and add butter.

    Once butter melts (do not let it brown), pour in egg mixture.

    Stir gently and continuously with a spatula, scraping from the edges to the center.

    Cook on low heat for 3-4 minutes, stirring constantly, until eggs form soft, creamy curds.

    Remove from heat while eggs still look slightly underdone - they will continue cooking from residual heat.
