Sunny Carrot Couscous with Cheesy Chicken Bites

Ingredients(6)

  • 1/4 cup dry couscous
  • 1/3 cup finely diced boneless chicken breast
  • 1/4 cup finely grated carrot
  • 1/4 cup frozen peas
  • 2 tablespoons shredded mild cheddar cheese
  • 1 teaspoon olive oil

Instructions(10 steps)

    Boil 1/3 cup water in a small pot (3 min)

    Stir in couscous, cover, remove from heat (1 min)

    Heat oil in small pan on medium (1 min)

    Sauté grated carrot until slightly soft (3 min)

    Add peas and 1 tablespoon water, simmer covered (3 min)

    Add diced chicken to pan, stir and cook through (6 min)

    Fluff couscous with fork and mix in half the cheese (1 min)

    Cut chicken pieces smaller if needed, then stir into couscous mix (2 min)

    Sprinkle remaining cheese on top and let melt off heat (1 min)

    Cool to lukewarm, check texture, serve with toddler fork and spoon (2 min)
