A colorful, soft couscous bowl with sweet veggies and creamy yogurt for tiny hands.

Ingredients(6)
- 1/4 cup dry whole wheat couscous
- 1/4 cup finely diced carrot
- 1/4 cup finely diced red bell pepper
- 1/4 cup cooked chickpeas, very soft and lightly mashed
- 2 tbsp plain whole milk yogurt
- 1 tsp olive oil

Boil 1/2 cup water in a small pot (3 min)

Add carrot and bell pepper to boiling water, simmer until very soft (6 min)

Stir in couscous, cover and let sit off heat (5 min)

Drain any extra liquid, fluff couscous and veggies with fork (1 min)

Stir in mashed chickpeas and olive oil until evenly mixed (2 min)
