  • 1 slice whole wheat bread, cut into 4 squares
  • 2 oz sliced turkey breast, cut into bite-size strips
  • 1/4 cup shredded mild cheddar cheese
  • 1/4 cup mixed bell peppers, finely diced
  • 1/4 small apple, cut into thin half-moon slices
  • 1 tsp olive oil

    Preheat oven or toaster oven to 375F / 190C.

    Cut bread into 4 equal squares. Dice peppers and slice apple.

    Brush bread squares lightly with olive oil and place on tray.

    Top each bread square with turkey strips and sprinkle cheese over.

    Bake until cheese melts and edges crisp lightly (6-8 minutes).
