- 3 oz boneless skinless chicken breast, cut in pea-sized pieces
- 1/4 cup finely chopped red bell pepper
- 1/4 cup finely chopped baby spinach
- 1/4 cup ripe mango, diced soft and small
- 1 tbsp olive oil, divided
