Sunny Chicken Couscous Confetti Bowl

  • 1/4 cup dry instant couscous
  • 1/4 cup finely diced chicken breast (small pea-sized pieces)
  • 1/4 cup finely diced cucumber, peeled and deseeded
  • 1/4 cup finely diced ripe mango (or soft peach)
  • 1 teaspoon olive oil
  • 1 tablespoon plain full-fat yogurt
