Jamaican Jerk Chicken with Rice and Peas

  • 1 small chicken breast, cut into bite-size cubes
  • 1 teaspoon mild jerk seasoning (low-heat blend)
  • 1 teaspoon honey
  • 1 teaspoon olive oil
  • 1/2 cup long-grain white rice
  • 1/4 cup coconut milk
  • 1/4 cup canned kidney beans, rinsed and drained
  • 1/2 cup water
  • 1 small sprig fresh thyme (or pinch of dried thyme)
  • 1 small garlic clove, minced
  • Tiny pinch of allspice

    Mix jerk seasoning, honey, and olive oil in a bowl. Add chicken cubes and toss to coat evenly. Let sit for 10 minutes while you prepare the rice.

    Combine rice, coconut milk, water, kidney beans, thyme, garlic, and allspice in a small saucepan.

    Bring to a boil, then reduce heat to low. Cover and simmer for 15-18 minutes until rice is fluffy and liquid is absorbed.

    While rice cooks, heat a non-stick pan over medium heat.

    Add the marinated chicken pieces in a single layer. Cook for 3-4 minutes without moving them so they get golden on the underside.

    Flip each piece and cook for another 3-4 minutes until chicken is cooked through and slightly caramelized from the honey.

    Remove thyme sprig from rice. Fluff rice with a fork and spoon onto a plate.

    Arrange jerk chicken pieces on top of the coconut rice and peas.
