
Jamaican Jerk Chicken with Rice and Peas
Tender chicken pieces marinated in a mild jerk seasoning, served alongside fragrant coconut rice and kidney beans. A taste of the Caribbean made gentle enough for little ones.

- 1 teaspoon honey
- 1 teaspoon olive oil
- 1/2 cup long-grain white rice
- 1/4 cup coconut milk
- 1/4 cup canned kidney beans, rinsed and drained
- 1/2 cup water
- 1 small sprig fresh thyme (or pinch of dried thyme)
- 1 small garlic clove, minced
- Tiny pinch of allspice

Mix jerk seasoning, honey, and olive oil in a bowl. Add chicken cubes and toss to coat evenly. Let sit for 10 minutes while you prepare the rice.

Combine rice, coconut milk, water, kidney beans, thyme, garlic, and allspice in a small saucepan.

Bring to a boil, then reduce heat to low. Cover and simmer for 15-18 minutes until rice is fluffy and liquid is absorbed.

While rice cooks, heat a non-stick pan over medium heat.

Add the marinated chicken pieces in a single layer. Cook for 3-4 minutes without moving them so they get golden on the underside.
