Mini Shepherd's Pie

Ingredients(7)

  • 100g lean lamb mince
  • 1 medium potato, peeled and cubed
  • 1/4 cup frozen peas
  • 1/4 cup diced carrot
  • 2 tablespoons milk
  • 1 teaspoon olive oil
  • 1/4 cup low-sodium beef or vegetable stock

    Boil potato cubes for 15 minutes until very soft. Drain and mash with milk.

    Meanwhile, heat olive oil in a pan over medium heat.

    Add lamb mince and cook, breaking up with a spoon, until browned (8 mins).

    Add diced carrot and cook for 5 minutes.

    Add peas and stock, simmer for 5 minutes until vegetables are soft.

    Spoon lamb mixture into small ramekins or a small baking dish.
