Chicken and Cheese Quesadillas

  • 1 small chicken breast (about 120g)
  • 2 small flour tortillas
  • 1/2 cup mild cheddar cheese, grated
  • 1/4 red bell pepper, finely diced
  • 2 tablespoons canned sweet corn, drained
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon mild paprika
  • 2 tablespoons plain yogurt (for dipping)

    Cut chicken breast into thin strips. Season with paprika.

    Heat olive oil in a non-stick pan over medium heat.

    Cook chicken strips for 6-7 minutes, turning occasionally, until fully cooked through with no pink remaining.

    Remove chicken from pan and let cool slightly. Dice into small pieces.

    Wipe the pan clean with kitchen paper.

    Place one tortilla in the dry pan over medium-low heat.

    Sprinkle half the cheese over the tortilla.

    Scatter diced chicken, bell pepper, and corn over the cheese.

    Add remaining cheese on top, then place second tortilla on top.

    Cook for 2-3 minutes until bottom tortilla is golden and cheese starts melting.
