Chicken Rainbow Couscous Boats with Apple Cheddar Bites

  • 1/3 cup small couscous, dry
  • 1/3 cup cooked chicken breast, finely diced
  • 1/3 cup red or yellow bell pepper, finely diced
  • 1 small crisp apple, cut into small cubes
  • 1 small romaine heart or butter lettuce, leaves separated
  • 1/4 cup mild cheddar cheese, cut into small cubes

    Add couscous, cover, remove from heat, stand (5 min)
