Mini whole-wheat couscous–stuffed lettuce boats with juicy chicken, sweet peppers, and crisp apple-cheddar cubes.

- 1/3 cup cooked chicken breast, finely diced
- 1/3 cup red or yellow bell pepper, finely diced
- 1 small crisp apple, cut into small cubes
- 1 small romaine heart or butter lettuce, leaves separated
- 1/4 cup mild cheddar cheese, cut into small cubes
