Creamy Red Lentil Coconut Carrot Mash

A silky, gently spiced lentil and carrot coconut mash with soft oat creaminess for a hearty midday meal.

Ingredients(6)

  • 3 tbsp red lentils, rinsed well
  • 1/4 cup carrot, finely grated
  • 1/4 cup ripe banana, mashed
  • 2 tbsp quick oats
  • 2 tbsp canned coconut milk (full fat, unsweetened)
  • 2 tbsp water (plus more as needed)

    Rinse lentils under running water until clean.

    Add lentils, grated carrot, oats, water, and coconut milk to a small saucepan.

    Simmer on low, stirring occasionally, until very soft and thick (about 8 minutes).

    Mash banana in a bowl until smooth.

    Check pot and add a splash of water if needed. Mash or blend to a smooth-thick puree with tiny soft bits.

    Stir in mashed banana, cool to lukewarm, and adjust thickness with water or breast milk/formula if needed.
