Sunny Lentil-Apple Cream Mash
A cozy, gently sweet lentil and apple mash with a hint of carrot and yogurt cream.

- 3 tbsp red lentils, rinsed
- 1/4 small apple, peeled and diced
- 1/4 cup carrot, peeled and diced
- 1/3 cup water, plus more as needed
- 2 tbsp plain whole-milk yogurt
- 1 tsp olive oil

Peel and dice apple and carrot into small pieces (4 min)
