Mini Berry Crumble Cups

  • 1 cup mixed berries (strawberries, blueberries, raspberries — fresh or frozen)
  • 1 teaspoon cornstarch
  • 1/2 cup rolled oats
  • 2 tablespoons unsalted butter, cold and cubed
  • 1 tablespoon honey
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon cinnamon

    Preheat oven to 375°F (190°C).

    If using strawberries, hull and quarter them. Leave blueberries and raspberries whole.

    Toss berries with cornstarch in a small bowl until evenly coated.

    Divide berries among 4 cups of a standard muffin tin or 4 small (6-ounce) ramekins.

    In a separate bowl, combine oats, flour, and cinnamon. Add cold cubed butter and rub between your fingertips until the mixture resembles coarse breadcrumbs.

    Drizzle honey over the oat mixture and toss to combine.

    Spoon the crumble topping evenly over the berries in each cup.

    Bake for 22-25 minutes until berries are bubbling and the crumble topping is golden brown.
