  • 1 slice whole-grain bread, toasted and cut into 4 squares
  • 1/4 cup cooked chicken breast, finely chopped or shredded
  • 1/4 cup cucumber, finely diced
  • 1/4 cup carrot, finely shredded
  • 1/4 small mango or 3-4 strawberries, finely diced
  • 2 tbsp plain yogurt, stirred smooth

    Toast bread and cut into 4 squares.

    Stir yogurt with a tiny pinch of salt if using.

    Mix chopped chicken and a spoon of yogurt in a small bowl.
